Just love the name of this

Roman Pie
3/4lb Short crust pastry
1/2lb Cooked meat cut into dices
2oz Macaroni
2oz Coarsely grated cheese
Seasoning's

Method
Roll out 3/4 of the pastry thinly and line a greased pie dish. Fill with layers of meat, macaroni and cheese. Put in a little cold water or stock. Season well.
Roll out remaining pastry, moisten the edges and cover the top of the pie.
Preheat oven for 15 minutes and cook pie for 45 minutes.
Serve with tomato sauce.

Very carbohydrate / wheat heavy but I fancy trying it if I can find a way around those issues. Add some vegetables & it's good to go

Friar's Omelet

Preheat oven.

4 large cooking apples
1oz butter
1 lemon (I used juice & rind)
2oz breadcrumbs (I used stone ground oatmeal)
1 egg (I used 4)
Sugar to taste (I used honey)

Pare, core & slice apples then stew until tender with the butter, lemon. Once stewed beat to a pulp then set aside to cool right down. When cooled add beaten eggs & honey to taste. Line the bottom of a shallow oven proof dish then pour on mixture & top with oatmeal.

Bake in a moderate oven 350F / 180C / Gas Mark 4 for 30 minutes.

Serve with cream or custard & a dash of cinnamon, nutmeg or both.

Had this tonight.

Very nice

Just what's in here that I can remember. I do have some more old books since I did that one that need looking through to see what's in there.

Sugar beer for Harvest

Ingredients
1 cupful (1/2 pint) hops
1 gallon water
1 slice toast
Honey or sugar to sweeten
Yeast (1 tablespoonful of brewers yeast or 1/2oz compressed yeast creamed with sugar)

Time: 24 hours

Method
Boil the hops in the water for 2 hours, then strain. Add honey or sugar to sweeten the liquid and pour into an earthenware vessel. Float the toast on top with the yeast on top of that. Cover with cloth and leave to stand all night. Next day take out the toast and skim off the froth, when the mixture will be ready for drinking.

This drink does not keep for long. Quantities should be limited to 3 or 4 days supply. It is a very refreshing drink and was much used during harvest time for "elevenses".

Mushy peas

Serves 4-6

475g frozen peas
65g butter
6 mint leaves
Salt and pepper, to taste

1 Defrost the frozen peas in a large pot filled with cool water — this should take a only few minutes. Strain, shaking off as much excess water as possible.

2 Reserve about one-fifth of the peas.Place the remaining peas into a sauté pan, along with the butter and 50ml water. Cook over a medium heat until all the water has evaporated and the peas are cooked through. If your water is very hard, it would be best to buy some bottled water (or, even better, de-ionized car-battery water) to use when cooking the peas, as this will help to keep their colour bright green.

3 Place the cooked peas into a blender (or use a stick blender) and purée. While blending, adjust the taste by adding the mint leaves and the salt and pepper.

4 Fold in the reserved peas and serve.

Went to the Beamish working museum yesterday & there was this recipe.

Parkin Biscuits
8oz oats
8oz flour
2oz sugar
4oz butter
8ox treacle
Pinch of salt
1 tsp bi-carb
1/2 tsp ground ginger

Mix dry ingredients. Warm butter & treacle in a pan then add to rest of ingredients. Mix together then roll into small balls & flatten slightly before putting onto a greased tray. Bake for 20 minutes on gas mark 4. Remove & allow to cool before eating.

As with all things I've tweaked the recipe  & will write that one up if they turn out okay in the next few minutes when I open the over door :-k

Okay they are out of the oven & spanking gorgeous :supz:

Additions where:

100gm chocolate hemp powder
2 tsp ground ginger
1 tsp cinammon
Flour: went with spelt
Oatmeal: used stone ground variety.

Will tally a few things up then get a breakdown of the nutritional totals for the whole batch.

Third batch of this now with hemp powder up to 150 grams. Fats coming from 30z butter & 30z olive oil & with this last batch I've added the left over pulp from some juicing sessions.

Baking it as a loaf to see if it can be sliced & easily transported.
