Which is the best to use that doesn't "burn" or go "rancid" at temperature?

Without question Virgin Coconut Oil, makes great popcorn too.
Reasonably affordable especially when compared to other oils (walnut, etc..) though they are having problems in that area of the world with the weather this year that effects supply, but not enough to prevent you from getting it.

Alot of other oils, canola and the like, are starting to be derived from GMO crops which you need to avoid.

Trying this at the moment. Need to email them to check that its GM free as I can't find anything on the bottle.

Coconut oil is good & I found a decent one. Then they stopped selling it ](*,)

Not a fan of canola at all. Do not have experience with palm oil as far as cooking, but it is great for the skin.

It "seems" okay. Rather red in colour which shows in the food your cooking. Still not heard back from the company as to whether it is GM free or not.

the palm oil part probably is, but the canola probably is not.
