Chachouka
3 tablespoons olive oil
1 teaspoon cumin seeds
1 large onion
1 garlic clove
2 peppers
1 teaspoon smoked paprika
400g tin tomatoes
3-4 eggs
salt & pepper.
Method
Heat oil & add cumin seeds. Cook for around 2-3 minutes. Add chopped onion, garlic & peppers & fry gently for 20-25 minutes till soft & wilted. Add paprika & tomatoes. Cook for a further 10 minutes. Pre heat oven to gas mark 4. Make wells in the mixture & crack in eggs. 4 if sharing & 3 if its for yourself Place in oven (if oven proof) for & bake for 6-12 minutes till eggs are cooked but yolk is still runny.
Eat as is or serve with sourdough or rye bread.
