Gluten free recipes

Postby Cookie » Thu Dec 27, 2012 1:29 pm

Tried this one this morning.

Pancakes
Eggs
Banana(s)
Cinnamon
Bicarb

Smash the banana(s) up, add in the eggs & remaining ingredients. Blend to a smooth consistency then add to pan.

Add topping(s).

I would suggest cooking small pancakes. I tried a full sized one this morning & it took too long to cook. Plus the pancake is quite fluffy so doesn't hold as solidly as a regular one.

Tasted surprisingly good.

Quinoa porridge: Serves 4
1 cup quinoa
2 cups water
1 cup almond milk
1 banana
1/4 cup desiccated cononut
2 tablespoons extra virgin olive oil
Good pinch sea salt
1-1.5 teaspoon cinnamon

Add Quinoa & water to pan, bring to boil then simmer for 15-20 minutes till water has been absorbed & quinoa is light & fluffy. Place all ingredients to blender & blend till smooth.

Top with nuts or dried fruit.

Can be made night before & served cold.

Just made this & it tastes AWESOME!

Just made the above "porridge" with amaranth grain but added an extra cup of milk (hemp today) to the mixture as amaranth is quite sticky once its cooked.

Sounds good, might have to try. Is it helping with bloating?

This is quite good, the Quinoa really surprised me + it made more than I was expecting.

Well it does state on the recipe it makes FOUR servings not one :finga:

And yes it's a very nice "porridge" & makes a great change from regular oatmeal.

Funny munt :finga:

Made a batch up today but didn't have any almond milk in so dropped the dessicated coconut & just used a can of coconut milk. Not bad, had to watch it though. Very hunger could have eaten the entire batch

Not made these yet.

1x medium banana mashed
1 Tbsn melted Coconut Oil
2x large ripe avocados (or 3x small)
1/2 c Honey
3 Eggs
1/4 c Unsweetened Cocoa Powder
1 Tbsn Vanilla extract
1 Tbsn Dessicated Coconut
1 Tspn Baking Soda
1/2 Tspn Salt
30g Protein Powder (optional)

Blitz the avocado & banana in a food processor. Make sure it’s really smooth.
Add all the remaining ingredients to the avocado & banana and blitz again until REALLY smooth and fluffy.
Pour the batter into a greased (coconut oil?) 8×8 baking dish.
Bake at 350 degrees for 35 minutes, or until a toothpick comes out smooth.

Put the following in a food processor and blitz! 170g desiccated coconut, 50g mixed seeds, 2 egg whites, 25g dried fruit (I used apricots), 50g nuts, 2-3 Tbspns almond butter.

Roll the mixture into golf sized balls and bake for 15 minutes at 180
