Dairy free recipes

Just tried this one & its pretty nice. Need to find a recipe to use up the pulp.

Ingredients:

1 cup raw almonds
water for soaking nuts
3 cups water
2 dates (optional)
1/2 tsp vanilla (optional)
Preparation:

Soak the almonds in water overnight or for at least 6 hours.
Drain the water from the almonds and discard. Blend the 3 cups of water, almonds and dates until well blended and almost smooth.

Strain the blended almond mixture using a cheesecloth or other strainer.

Homemade raw almond milk will keep well in the refrigerator for three or four days.

Nut butters.

Place nuts in blender (check to see amount your blender will deal with)
Blend for 15-30 seconds, stir, and repeat.
After about 5mins the fats in the nuts will start to bind the powder together. Keep stirring and blending, and eventually a paste will form...basically the butter you have been patiently waiting for. Blend a bit more and it will quickly become quite runny (normal nut butter consistency).

Each batch took about 15mins (the power and capacity of your blender will effect this time). For the Almond butter add a sprinkle of Cinnamon once it had formed the paste.
