Curried Eggs

A great way to start the day on a lazy Sunday morning.

Time 1 hour For 4 persons

Ingredients- 4 eggs, 1 large onion, 1 apple, 1 heaped teaspoon curry powder, 1 dessert spoonful chutney, 1.5 oz butter, 1 oz flour, salt, Lemon juice from half a lemon. 1/4 pint water, 1/2 teaspoon Marmite or Vegemite (optional)

Method:

Boil and shell eggs then cut lengthways

Peel and chop onion and apple then fry gently in butter, when slightly brown sprinkle over the curry powder and fry for a further 1-2 minutes. Dissolve Marmite/Vegemite in the water, season with salt and add to the frying pan. Squeeze in the lemon juice and cook for 10 minutes, then put in the eggs and chutney and cook right through for 10 minutes. Remember to cook so that the juices in the pan go to a nice syrup consistency.

Then serve.

I like this with a slice or two of freshly toasted crusty bread and coffee.
